Recipe:
Serves: 2 | Prep Time: 15 Minutes
Ingredients:
- 2 zucchinis (weight 14 oz./400g)
- 2 tbsp Parmesan cheese, grated (divided)
- 4 eggs
Instructions:
- Wash the zucchinis and create spaghetti-like noodles using a spiralizer or slice thin ribbons with a vegetable peeler.
- Heat 1 tbsp olive oil in a non-stick skillet over medium heat. Add the zucchini and sauté for 1 minute to soften.
- Sprinkle 1 tbsp Parmesan cheese over the zucchini and season with salt and pepper. Mix thoroughly.
- Divide the zucchini mixture into four portions and shape into round fritters in the skillet. Create a small well in the center of each fritter and crack an egg into each well.
- Cover the skillet with a lid and cook for about 5 minutes, or until egg whites are set and yolks are still runny.
- Remove from heat, season with salt and pepper, and sprinkle with the remaining Parmesan cheese. Serve immediately.
